Entre los factores que lo han impulsado, el desarrollo de plataformas online de delivery pasa a ser de los m\u00e1s relevantes. Este 2020, se proyecta que el sector facturar\u00e1 US$62,798 millones a trav\u00e9s de plataformas online de delivery, en todo el mundo. Eso representa un crecimiento anual de 8.2%; resultando un volumen de mercado de US$86,006 millones proyectado al 2024.<\/p>\n<p>Per\u00fa no ha sido ajeno a esta tendencia de crecimiento y se espera que se facture US$28 millones este a\u00f1o, con una proyecci\u00f3n de $40 millones para el 2024, seg\u00fan el reporte de Statista. Pese a este crecimiento exponencial, aun parece incipiente en comparaci\u00f3n con otros pa\u00edses de la regi\u00f3n como Brasil ($1,129m), Argentina ($242m) y Colombia ($107).<\/p>\n<p>El crecimiento de las plataformas de delivery por aplicaci\u00f3n ha ido de la mano con los cambios en los h\u00e1bitos de compra de los consumidores, quienes se han vuelto m\u00e1s exigentes y buscan la misma calidad y variedad en sus oficinas o casas que en un restaurante. Bajo esta perspectiva, han nacido las \u201cdark kitchen\u201d. Los usuarios de aplicativos como Uber Eats, Rappi, Glovo u otros quiz\u00e1 no sepan que muchos de sus pedidos ya no se preparan en el restaurante o el establecimiento de su preferencia. Tambi\u00e9n conocidas como cocinas virtuales, cocinas fantasmas o restaurantes s\u00f3lo para delivery, las \u201cdark kitchen\u201d son espacios f\u00edsicos que utilizan los restaurantes para preparar pedidos para env\u00edo a domicilio. Estos espacios pueden ser propios o de terceros; en cuyo caso son arrendados parcial o totalmente por los restaurantes.<\/p>\n<p>Estamos frente a un formato en crecimiento, con proyecci\u00f3n a expandirse en m\u00e1s de 10 distritos de Lima este a\u00f1o, seg\u00fan uno de sus m\u00e1s importantes jugadores. Las ventajas econ\u00f3micas tangibles son: el bajo costo, reducen hasta el 95% de la inversi\u00f3n de montar un restaurante y el tiempo de apertura, incrementa la eficiencia de las operaciones de entrega y el tama\u00f1o del mercado potencial. Adem\u00e1s, involucra al personal esencial, que est\u00e1 relacionado directamente con la producci\u00f3n de alimentos.<\/p>\n<p>En Lima se estima que se mueven alrededor de 600 mil pedidos de delivery al mes. Para una ciudad de m\u00e1s de 11 millones de habitantes el potencial a\u00fan es grande.
